Our Story
Avec Noelle was founded by Pastry Chef and Chocolatier Ashleigh Pearson. Ashleigh studied at Le Cordon Bleu in Paris and graduated first in her class. Working in bakeries during the day and studying at night she learned to appreciate French techniques.
after leaving France she worked at many fine dining restaurants but eventually became a chocolatier while working for Chef Thomas Keller at 3 Michelin Starred Per Se. The desire grew to bring fine dining confections to a more casual environment.
Today Ashleigh operates Avec Noelle, a chocolate workshop in the heart of Atlanta making small batch chocolates, confections, sablé, and bars. Every confection celebrates the flavors from her childhood married to techniques from her classic French training.
